Spicy Suasages

This is a tasty, quick and easy dinner meal. Any type of sausages can be used, preferably a plain flavour but feel free to try other ones. The onion can be sliced or diced, it doesn't really matter, and the bacon just needs to be chopped into smallish pieces, about 1 cm but it's not critical. Dial back the mustard if you want to make it less spicy.

Goes well with rice or mashed potatoes. Add some greens or some sliced bread and dinner is done. 

Quantity: serves 2 - 4, depending on accompaniments

Cook time: 15 minutes

Ingredients 

Quantity Ingredient
6 Sausages (plain beef or pork work best)
2 rashers Bacon, roughly chopped into pieces
1 Onion, sliced or diced
4 Tbsp Tomato sauce
1 tsp Prepared mustard, or ½ tsp mustard powder
4 Tbsp Water
  Oil for shallow frying

Method

  1. Pre-cook the sausages in boiling water until cooked through, then cool for 5 mins
  2. Skin the sausages and slice into rings about 1 cm thick 
  3. Heat about a Tbsp or 2 of oil in a pot then add the sausages and fry for a few minutes to brown, stirring often. To save dishes, rinse out the pot used for pre-cooking the sausages and reuse
  4. Add the onion and cook for a couple of minutes, then add the bacon
  5. Continue cooking, stirring often, until the bacon is cooked and the onion has softened
  6. Add the sauce, mustard and water, and stir through. Keep cooking and stirring until it thickens up a little
  7. Serve with rice or mashed potatoes and some green veges for a full meal
