"Nino's" Garlic Bread
From the deliciousday youtube channel, this recipe was found at about the same time by 2 family members, both having the thought "we must try this!". So we did. And it was delicious
It's a little different from a standard garlic bread in that the loaf is scored/cut into cubes and the garlic butter spread on top before baking.
Quantity: 1 standard loaf, enough for 4 - 6 people
Prep time: about 30 minutes + rising time 1 hour
Cook time: 15 minutes
Ingredients
| Quantity | Ingredient |
|---|---|
| 1 | Egg, lightly beaten |
| 20 gm | Sugar |
| 4 gm | Yeast |
| 3 gm | Salt |
| 200 gm | Flour |
| 80 ml | Milk |
| 30 gm | Butter |
| For the garlic butter topping | |
| 15 gm | Butter, softened to room temperature |
| 1 Tbsp | Egg, lightly beaten (taken from the egg in the main ingredients) |
| 1 tsp | Sugar |
| 1 tsp | Mayonaise |
| 1 tsp | Minced/crushed garlic |
| some | Chopped parsley (optional) |
| some | Grated parmesan cheese (optional) |
Method
- Lightly beat the egg then reserve 1 Tbsp to use in the topping.
- Mix the remaining egg, sugar and yeast together in a largish bowl and leave for about 5 minutes to start bubbling
- Add in the flour, salt and milk and mix into a dough. Knead for around 3 minutes
- Add the butter to the dough and squish it in until it all absorbs, then knead the dough for another 5 minutes
- Put the dough on some baking paper on an oven tray and gently press into a circle about 2 cm thick. Leave for about an hour to rise. It will get slightly higher and spread out a bit
- After the dough has risen, turn on the oven to pre-heat to 170°C
- Gently press the dough to let the air out and flatten slightly
- Cut into 2 cm squares but leave it all connected, so you end up with the circle intact but with squares cut into it. It works better to leave about 1 cm uncut edge all around
- In a separate bowl mix together all of the garlic butter topping ingredients except the parmesan, then spread over the dough, pushing it down into the cut marks a bit. In the original recipe they add strips of mozzarella cheese, but I thought that was a bit much. A light grating of parmesan cheese all over works ok if you want to change it up, but it tastes great without it as well
- Bake at 170°C for 15 minutes
- Serve whole on a board and let people rip cubes off
